The Carte Blanche — French for "blank card" — is a dining concept rooted in the oldest traditions of French gastronomy. It means the chef has full creative freedom to compose your meal based on what is freshest, most inspiring, and most delicious that day.

Chef Maxence begins each afternoon by selecting the finest ingredients — from local Slovak producers, premium French suppliers, and seasonal markets. The Chef Behind the Menu
Chef Maxence Rouillon is a French-born executive chef who trained in some of the finest kitchens in France before bringing his expertise to Bratislava. His cooking philosophy bridges classical French technique with the best seasonal ingredients from Slovakia and Central Europe.
Working in Colette's open kitchen, Chef Maxence and his brigade prepare each course with precision and passion. Guests seated at the counter can watch the choreography of the kitchen — the flames, the plating, the final touches that transform ingredients into art.

A tasting menu is only complete with the right wines. Chef Sommelier Antoine "Corto" Guichard — trained in Burgundy — personally curates the wine pairing for each evening's menu. His selections focus on small, independent French producers, natural and organic wines, and Central European terroirs.
