Carte blanche is a French phrase that literally means "blank cheque" or "blank page" — a complete grant of freedom and trust. In the context of fine dining, it is one of the most meaningful things a restaurant can offer: come to our table, trust our kitchen entirely, and we will show you what we are capable of right now.

What Does Carte Blanche Mean at Colette?

At Restaurant Colette in Bratislava, the Carte Blanche is our signature tasting menu — a 5 or 7-course seasonal dinner in which Chef Maxence Rouillon selects every dish. There is no printed menu for you to choose from. You arrive, you sit, and the evening begins on the kitchen's terms.

This is not a gimmick. It is a creative position. The Carte Blanche format allows the kitchen to cook what is best right now — what is in season, what arrived from the market this morning, what technique the chef has been refining this week. It removes the limitation of a static menu and replaces it with something more honest: a direct expression of what the kitchen is currently doing at its best.

How Often Does it Change?

The Carte Blanche at Colette changes every few weeks — sometimes more frequently when a particularly exceptional ingredient becomes available. The four major seasonal transitions (spring, summer, autumn, winter) bring the most significant evolutions. Minor adjustments happen continuously as the kitchen responds to what is available at its peak.

The Role of Trust

The Carte Blanche format requires something of the guest as well as the kitchen: trust. You are giving up control of your dinner, and that can feel unfamiliar. But the exchange is worth it. When you release the menu card, you stop planning the evening and start experiencing it. Dishes arrive that you would not have ordered for yourself. Some of them become your favourite things you have ever eaten.
