A tasting menu is one of the most rewarding ways to experience fine dining — but if you have never attended one before, it is natural to have questions. What do you wear? How long does it take? What happens if you have dietary requirements? This guide answers everything you need to know before booking a tasting menu in Bratislava.
What is a Tasting Menu?
A tasting menu (also called a degustation menu or menu dégustation) is a multi-course dining experience — typically between 5 and 10 courses — in which the chef presents a sequence of dishes that express their culinary philosophy and the season's best ingredients. Unlike à la carte dining, you do not choose individual dishes: you place your trust in the kitchen and allow the evening to unfold.
At Colette in Bratislava, this takes the form of the Carte Blanche — a 5 or 7-course seasonal menu by Chef Maxence Rouillon that changes every few weeks. The name means "blank slate": the chef decides, and the guest receives.
How Long Does a Tasting Menu Take?
A 5-course tasting menu typically takes around 2 to 2.5 hours. A 7-course menu will take 2.5 to 3 hours. The pace is intentional — courses arrive with considered spacing, allowing conversation and reflection between each. This is not a quick dinner. It is an evening.
What is the Dress Code?
At Colette, the dress code is smart casual. Most guests dress to reflect the occasion — it is a special evening and the atmosphere rewards that. Ties are not required, but jeans and trainers would feel out of place.
Should I Add Wine Pairing?
If you enjoy wine, yes — without question. Sommelier Antoine "Corto" Guichard designs each pairing specifically for the current menu, selecting wines that add a dimension to each dish that the food alone cannot provide. The pairing is an integral part of the Carte Blanche experience at its fullest.
Can I Have Dietary Requirements Accommodated?
Yes. Indicate your dietary requirements, allergies or intolerances at the time of booking and the kitchen will design your menu accordingly. Vegetarian tasting menus are available at Colette. For severe allergies, please call directly to discuss: +421 908 889 308.
Do I Need to Book in Advance?
Yes — advance booking is essential. Tasting menu services at Colette have limited capacity. We recommend booking at least 3–5 days in advance for weekday evenings and 7–10 days for Friday and Saturday.
