Mussels, as we know them in Slovakia, whether we call them mussels or moules, have become a popular dish thanks to their delicacy, their sea flavour and their ability to take on the aromas of wine, garlic and fresh herbs. At Colette we prepare them traditionally - in a steam bath of white wine, shallots and parsley.

As a side dish, we serve new potatoes with a fresh herb sauce that beautifully complements the seafood character of the main course. This combination has made mussels the most popular dish on our Sunday tasting menu.
